As far as the strawberry pie is concerned, I'm a purist: shortbread crust only, with a bed of pastry cream. Chantilly cream (as seen in many supermarket pies) is an heresy! It's best in summer to put it in the fridge before serving, so that the water in the strawberry as well as the cream will be cool and refreshing.
